The present invention provides an image adjustment method and an image adjustment system. The image adjustment method includes the following steps: acquiring a first image signal via an image sensor; filtering the first image signal using a low-pass filter to generate a low-frequency image signal, and subtracting the low-frequency image signal from the first image signal to generate a high-frequency image signal; generating a minimum value based on the low-frequency image signal and calculating an adjustment value based on the minimum value; and multiplying the adjustment value with the high-frequency image signal, then adding a reference signal to obtain an adjusted image signal.
